Ingredients for the Cake:

. 6 tbsp. unsweetened cocoa powder
. 3 c. all-purpose flour

. 2 tsp. baking soda
. 2 tsp. baking powder
. 2 c. granulated sugar
. ? c. soft avocado (well mashed)
. ? c. vegetable oil or almond oil
. 2 c. water
. 2 tsp. vanilla extract
. 2 tbsp. white vinegar

Ingredients for the Avocado Buttercream Frosting:

. 2 tsp. lemon juice
. 8 oz. avocado meat (use two small to medium ripe avocados)
. ? tsp. vanilla extract
. 1 lb. powdered sugar (sifted)

Steps for the Cake:

1. Preheat oven to 350 deg F. Flour and grease two 8? or 9? rounds then set aside.
2. Sift all the dry ingredients together except for the sugar. Set aside.
3. Combine all the wet ingredients in a bowl. Include the mashed avocado.
4. Add the sugar into your wet mixture. Stir.
5. Mix the wet mixture with the dry. Beat using a whisk until it becomes smooth.
6. Pour the batter into greased cake tins. Bake the batter for about 30 ? 40 mins. or until the toothpick comes out clean.
7. Allow cooling for about 15 mins. before putting them on the cooling racks. Add the avocado buttercream frosting.

Steps for the Avocado Buttercream Frosting:

1. Peel and ten pit the avocados. Avoid the brown spots in the avocado meat.
2. Put the avocado meat in the bowl of your stand mixer. Add the lemon juice. Whisk the avocado using medium speed until it features a slightly lightened color or until it is smooth for about 2 to 3 mins.
3. Mix the powdered sugar gradually. Beat. Add the vanilla extract and combine thoroughly.

*If you won?t be using the frosting right away, make sure you put it insider the refrigerator.
